Roasted Chicken with Mango Glaze
Mango glaze combines with mouth-watering roasted chicken in this Caribbean-style dish to hijack your sense especially after a hot summer afternoon.







This dish is especially delicious when paired with delicious Pinot Noir.

Ingredients

  • 1 whole chicken 
  • 1 and 1/2 cup of rice wine vinegar
  • 1 tsp minced jalapeno
  • ½ cup sugar
  • 2 ripe mangoes, peeled, seeded and sliced
  • 3 tbsp lime juice
  • Salt to taste
  • Black pepper
  • 2 tbsp of butter
  • ½ tsp dried thyme

Preparation

1. Heat vinegar in a saucepan and add sugar and stir
2. Stir till the sugar is thickened
3. Add ginger, mango and jalapeno and cook till the mix becomes soft
4. Place in a bowl and whisk until it becomes a smooth puree
5. Place it in a food processor to give it a round of processing to ensure it is smooth and silky
6. Strain if needed
7. You should get a consistence of a jam but for a glaze add honey to liquefy
8. Preheat oven to 500 degrees F
9. Rub the chicken all over with salt and butter and brush the mango glaze thoroughly onto the chicken
10. Once you have glaze the mango glaze let the chicken sit for 10 minutes
11. Place the chicken in the oven and after 10 minutes
12. Switch oven to 350 degrees and continue to roast
13. The total cooking time should be in the oven for over an hour

Remove the chicken once it is done and place it on a carving board for five minutes and then carve to serve.
