Gourmet Cajun Oven Fried Chicken

Fried chicken is love in Europe and the US and nothing is as reminiscent of home as a good plate of Cajun fried chicken. An excellent source of protein becomes even healthier when it is oven fried.

Ingredients

Serve: 4

  • 2 chicken breasts, skinned
  • 2 chicken drumsticks, skinned
  • 2 chicken thighs, skinned
  • (Alternatively you can also use 6 breasts or 6 leg thigh quarters)
  • 1 tbsp Cajun seasoning, salt free
  • 1/3rd cup buttermilk
  • 1 cup panko (Japanese bread crumbs)
  • Salt to taste

Preparation

1. Preheat oven to 400°F/205°C
2. In a bowl add a dash of Cajun seasoning, buttermilk and salt (to taste)
3. In another bowl pour the Japanese breadcrumbs (panko). This add to the crispiness of the chicken
4. Douse the chicken one at a time in the buttermilk mixture and then coat it with panko
5. Place the chicken on a baking sheet with parchment paper and coat it lightly with cooking spray
6. Bake it at 400°F/205°C turning it twenty minutes, for about 45 minutes or until it is completely done

The Cajun chicken is delicious with rice and sliced tomatoes on the side. The Cajun fried chicken also goes well with iced tea or a good beer.
